Tomato Basil Buttermilk Bisque

It has been a l.o.n.g. time since I’ve posted a recipe, but I think I’ve found a winner folks!

This is the absolute perfect warm-your-belly-up-on-a-rainy-day soup.

I just polished off my second bowl. Yummm.

Tomato Basil Buttermilk Bisque

Adapted from Southern Living.

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 lb (1/2 of a 16oz box) Organic Whole Wheat Bow-Tie Pasta
  • 2 – 14.5 oz cans Organic Diced Tomatoes with Garlic, Oregano, and Basil
  • 2 – 14.5 oz cans Organic Tomato Soup (ready to eat, no salt added)
  • 3 C Low-Fat Buttermilk
  • 1/4 C chopped Fresh Basil
  • 1 tsp Ground Pepper
  • 1 tsp Dried Oregano

Toppings: Fresh Parmesan, Basil and Ground Pepper

Instructions:

  1. Cook Pasta and drain.  Set aside.
  2. Chop Fresh Basil.
  3. Add Diced Tomatoes, Tomato Soup, Buttermilk, Chopped Basil, Ground Pepper, and Oregano into a large stock pot.
  4. Heat on medium, stirring often, for about 5 minutes.
  5. Add pasta, heat through.
  6. Serve immediately with desired toppings and enjoy!

If you are curious, the soup base I used was Health Valley Organic Tomato Soup. No salt added. Ready to eat.
