Hello and welcome!
My name is Stephanie, and I am a Registered Dietitian Nutritionist.
I started the blog formerly known as “On the Road to RD” during my undergraduate education to chronicle my journey from student to intern to RD.
And I’ve made it! I’ve completed my journey! Even though I have letters behind my name, it doesn’t mean that I’m finished telling my story. I still love to share my day-to-day experiences, simple + healthy recipes, running rampages, and all things I find amusing in my little world.
My story
I grew up in the beautiful Pacific Northwest, in a small town in Central Washington, nestled in the foothills of the Cascade Mountains, among the apple orchards, along the majestic Columbia River… I could go on, but what I’m trying to say, is my hometown is beautiful. I had a very healthy and active childhood, it wasn’t until I left home that issues with my weight surfaced.
My original life plan was to become an actress on broadway. I traveled to Chicago, and eventually on to NYC to study. There is something about performing – it lifts you up… but at the same time, there is a great deal of criticism – and for me, sometimes that came in the form of my appearance. Difficult to hear even for the most cold and jaded. My weight was up and down. Most of the time I felt out of control.
I came back home for a summer before graduation, regrouped, got a trainer, started to re-learn what healthy eating means and, more importantly, feels like. From that point on there was no turning back . I started working at a gym, became an aerobics instructor, and went back to school to become a dietitian. I finished my undergrad at Rochester Institute of Technology, and traveled back to the beautiful West Coast to complete my year-long supervised dietetic internship at Cal Poly, San Luis Obispo. And here we are 5 years later, loving every moment!
I am, by no means, the perfect vision of health. I still indulge, overeat, and slack off on workouts, but for most of the time I try to lead a healthy life. I believe that eating right can bring the best out in a person. I also believe that food is not simply just fuel. Food is an integral part of the human experience; it is love, celebration, family, tradition, and yes, sometimes even comfort. I cherish those moments when you take the first bite of something so incredibly delectable your senses explode – bliss, exhilaration, pleasure. I love food and I love to eat. And I hope to share that with you here.

Hi, I read your blog today and wanted to tell you good luck on your application to Cal Poly. I applied to Cal Poly as well, but I haven’t gotten called for an interview 😦 I think its a sign and I don’t think its going to happen [Big sigh]. We will see. On another note reading your blog has given me a dose of inspiration 🙂 so thank you! Keep being you, as you inspire those you don’t even know!

Hahaha – I LOVE the Sound of Music references. I can’t sing, dance, or act at all – but I am a huge fan of that musical! I seriously want to travel to Austria and run around in a field singing “The Hills Are Alive with the Sound of Music…..”. Anywho – good luck on your RD Journey. I know the matching process is stressful!

Great blog 🙂 I was googling information about CWU Dietetic Internship and this came up on google lol. Then all the food pictures caught my eye 😀 Congrats on the internship – thought it was funny because Cal Poly was one of my choices too – I was matched to Washington as it was my first choice 🙂 Awesome to see a fellow “future dietitian”, foodie and marathoner! Hi, Stephanie! I just found your blog, and I’m already in love! I’m also a RD 2 be, and I joined the blogging community not too long ago in hopes of meeting and being inspired by people like you! I LOVE Sound of Music (who doesn’t, right?). I moved to the States when I was 10 years old, and the movie was all I watched. I didn’t understand anything but loved the music! Music is def a universal language, no? My family still watch it every Christmas. Anyway, can you tell I’m slightly obsessed with it was well? 😉

Love your honesty! I need to put more on my “about” page to explain about RDs I feel as if people think we just make healthy food and count calories… WRONG!
